Making hand rolled truffles at home is easy and yields professional results! Learn from master chocolatier, Mark Tilling, as he shows how to make a classic chocolate ganache that then gets rolled into delicate truffles. You will learn how to add flavors to your ganache and decorate your truffles with cocoa powder or metallic dusting colors. These truffles require only a few ingredients and can be made in advance.
Here’s what you’ll need:
 Equipment:
  • Stove and microwave
  • Saucepan
  • Whisk
  • Candy thermometer
  • Spatula (Mark uses a spatula with a built-in thermometer, which you can find here
  • Plastic bowl
  • Latex gloves
  • Small metal tray
  • Tupperware for storage
  • Melon baller or spoon
  •  
    Ingredients:
  • 200 grams tempered dark chocolate (to learn how to temper chocolate, take Mark’s Creativebug class, Mastering Chocolate at Home)
  • 200 grams dark chocolate (un-tempered)
  • 200 grams whipping cream
  • 1 tablespoon corn syrup
  • 25 grams butter
  • Raspberries
  • Metallic dusting powder
  • Cocoa powder

It was a great class, but we need to avoid high fructose corn syrup; it is so bad for our health. Also, why not heat cream and chocolate on the stove rather than using the microwave and plastic, both of which are also bad for our health?
