The knitting technique is interesting and could be fashioned from that point on without felting. A softer felting (less time, less friction) would prevent the knitting to become hard to work with (i.e. pierce with a needle). Felting with roving is much simpler and will give you felted spheres that also could be "soft felted".
I ´ve worked with many different groups of children and adults, and needed to adapt methods to provide options.
An alternative to the embroidery so your needle does not have to pierce the centre (of hard felted spheres) is to catch the fiber at the centre and wrap from the outside. If the centre (where you catch the fibre) seems "messy" add a tiny button or other flatish decoration to hide and as embellishment.
And finally a tight square knot usually works with elastic cord.
