Love your classes! I've made so many no see blankets knotted like this, both single and double layers over the years and just barely had someone request a different edge other than the knots because the knots are uncomfortable for the kids to lay on. I make them for a women's shelter and they want things to be as easy for the kids who come through their doors as possible because there isn't much good going on in their lives when they come to the shelter.
I'm learning some new ways to do the edging to keep it from being knotty. I'll keep you posted on my findings!
